Palacinke
Palačinke is an essential recipe in every Balkan and Slavic kitchen. Great for breakfast and desserts in our household! You can fill it with whatever your heart desires. I love mine with berries or apple butter. My godkids love it with Nutella.
Ingredients
2 Eggs (omit eggs if you’d like to make it vegan)
1 tsp. Vanilla
4 cups Flour
2.5 cups Milk or Water
1/8 tsp. Salt
1 tsp. Sugar
DIRECTIONS
1. Whisk the eggs.
2. Then, add a sprinkle of vanilla.
3. Add small amounts of flour at a time and whisk so you don't have lumps.
4. Add milk so it has a consistency that is not soupy. If it's soupy (too much milk), just add more flour.
5. Add sprinkle of salt. Add a little sugar too.
6. Mix all ingredients together in a large bowl.
7. Use a non-stick pan and put a few drops of oil in the pan. Pour a small amount of batter with a ladle into a heated pan and tilt it from side to side, so that the batter is thin and covers the entire pan.
8. Brown lightly on one side and flip to cook on the other side.
9. Spread jam/sugar/cheese/fruit/etc inside the crepe and roll it up. Sprinkle with powdered sugar or cinnamon if you’d like it sweet.
10. Serve warm and enjoy!
